Easy Oven Eggs are a January dinner tradition at our house. After a holiday season filled with much cooking and spending, this recipe is easy on the cook and budget. My kids gobble this dish up and never seem to mind having "breakfast for dinner."

To celebrate the New Year, I've reduced the price to $2.10. It seemed so fitting. Why not?!

My husband's grandmother sent us a cookbook written years ago by her Wenatchee, Washington church congregation. I adapted this recipe from it. You can omit the ham for your vegetarian eaters. Or, consider making it at Easter when eggs are on sale and you have extra ham to use up. Enjoy!
