Skillet Rice and Beans is one of my all-time favorite recipes. It's delicious warm and even better for lunch the next day. And it's usually a big hit at potlucks and family BBQs too!

The recipe utilizes the 8-pack cartons of diced tomatoes and black beans from the warehouse clubs. It is vegetarian and the Cheddar cheese is optional, so would be appropriate for vegans.

The yield is 8 entrees, which serve 6 each. Use a big skillet that has a lid!

The .pdf file also contains my Handmade Bold Taco Seasoning recipe, which is called for in the Skillet Rice and Beans, plus a template for freezer labels. Recipe cost is $2.10 and is available until June 4th.
