Navajo Green Chili

This recipe was adapted from Chili Madness, by Jane Butel (who's a chili cook-off judge from the Southwest).

My version is a little different and customized for the freezer. Buy cans of diced green chiles and pinto beans near Cinco de Mayo, when they are more likely to be on sale. And don't forget coupons! Coupons helped push my final cost under $7.50 per entree!

I love having this slow cooker recipe on hand for busy Spring days when there's still a nip in the air. We enjoy this chili topped with shredded Cheddar cheese, a side salad, and rolls or cornbread. The spiciness of chiles can vary. If the chili seems too mild, add ½ teaspoon crushed red pepper flakes to each entrée before cooking.

Warehouse Ingredients: Whole pork loin; #10 can diced tomatoes

Navajo Green Chili makes 4 entrees, 5 servings each. $2.10 and available only until May 7th.
